Storage

Storing your products

Everything is delivered vacuum-packed, ready to be stored or enjoyed. Here is how to get the most from it.

Vacuum-packed

Every product is vacuum-packed for delivery.

1 month

From delivery with the pack sealed, then another month after opening.

Freezing

Possible, to keep it longer.

On receipt

Put your products in the fridge as soon as they are delivered, without opening the pack. The vacuum pack protects the cheese and cured meat: they keep for 1 month from the delivery date, as long as the pack is sealed.

Once the bag is opened

Once the vacuum pack is opened, your products keep for another month in the fridge, if you follow these tips.

Cheeses

Beaufort, Comté, Cantal, tommes, Morbier…

  • Keep the cheese in the vegetable drawer of the fridge, with plastic wrap pressed tightly against the cut face to stop it drying out.
  • Change the wrap each time you reopen the cheese.
  • Take it out about 30 minutes before serving, so that it recovers all its aromas.

Cured meats

Saucisson, dry-cured ham, coppa, dried pork tenderloin

  • After opening, keep the cured meat in the fridge, in the vegetable drawer, with plastic wrap pressed tightly against the cut end to stop it drying out.
  • For the ham, press a slice against the cut surface so it does not dry out.
  • Cured meats can also be kept in the open air, in a cool room.
  • Another traditional method: keep it in a box filled with wood ash from the fireplace. It takes on a particular flavour and keeps longer.
  • Cut into thin slices just before serving.

Freezing your products

If you can’t eat everything within the month, freeze your products in their vacuum pack. Thaw them slowly in the fridge, still in their packaging. Thawed cheese keeps its flavour but its texture becomes a little more crumbly: it is perfect for cooking (see the recipes).
